Chili Lime Tofu, Mango BBQ Beans and Mashed Yucca

So I took a little under a week off from MoFo but I'm back. Life was getting a little hectic and expensive so the last real meal (and by real, I mean anything anybody may want to read about) I made was the Pumpkin Baked Ziti. Normally I do a lot of cooking on the weekends but this weekend I was feeling super lazy and I also have been at the bfs with all 3 dogs for a few days so cooking a big meal wasn't at the top of my list.

Speaking of the dogs, we took them to the park today. Before I get to the food, take a look at my 3 adorable vegan pups!

Since I wasn't super motivated to put energy into cooking but still wanted a good home cooked meal I wanted to make something super low maintenance but still healthy. My copy of Appetite for Reduction was laying around my guys kitchen so I turned to that for inspiration. I decided on Chili Lime Tofu, Cilantro Lime Yuca, Mango BBQ Beans and some wilted spinach.

When I got to the market I was super distracted so when buying the tofu, instead of grabbing a block of firm tofu I accidentally grabbed the pre-cubed kind. I didn't realize it until the beans had already been cooking for a  bit so I didn't have time to go back. I had to make it work. Initially, before I realized I had bought tiny cubes of tofu, I was intending on a 100% Latin American inspired meal but I modified things a bit and even though the tofu didn't have all Latin flavor, because I used some soy sauce, it was still fuckin' awesome and worked really well with everything else.

When I decided to make the Mango BBQ Beans, I wasn't sure how I'd feel about them. I don't like mango. At all. My guys loves it so I decided to make them. I used to love mango though, in my early 20s (and pre-vegan days)I would make a Thai style mango sauce all the time to serve over non-vegan proteins. Even after I went vegetarian, and then vegan, I would still make the same sauce and serve it with tofu or fake chicken and I still loved it. I don't know what happened, the last year or two, my tastebuds have changed I guess. I did end up loving these beans though, probably because the mango wasn't the main taste in the dish. The sweetness of the fruit complimented what would have otherwise been a really tangy sauce

The yucca, oh the yucca, I love this starchy little tuber so so much. I have only ever had yucca fries with a cilantro chutney dipping sauce, but I could eat my weight in that shit. I already knew the cilantro in the recipe would be a good match but I wasn't sure how I felt about the lime so I made some changes. I did use lime, just a tiny bit though and added a little Earth Balance and a tablespoon or two of Galaxy Vegan Cream Cheese. I did cheat though, I initially had fresh yucca in my cart but once I hit the frozen section and saw a bag of it already peeled, I switched them out.

For the tofu, since I ended up with tiny cubes of tofu, I clearly couldn't press it or dry fry it like I wanted so I decided, after draining them, to toss them in a little bit of chili powder and bake them on a sheet for about 15 minutes to get some of the moisture out. Once they were done I tossed them in a pan with the sauce and cooked it until it was more like a glaze.

When I cook for my guy, I always give him his plate first so he can start eating while I am plating and photographing mine. After about 2 bites, he was hollering from the living room how fantastic it was! Success? Yes! I agree with him, I was super proud of myself when I finally sat down to eat mine. AFR has not let me down yet.

Vegan MoFo Post 4- Chipotle Lime Grilled Tofu with fried rice

Seriously guys, I am getting spoiled at work! We have a new head chef who has been coming up with some pretty badass specials for our daily menu. For example, tonight's Entree Special was Chipotle Lime Grilled Tofu with mashed yucca and a lime cashew crema. It looked awesome an people loved it!

My dinner was a little different but still just as awesome. He cooked up some of the tofu he was using for the special and put it on a bed of fried rice with a side of kale greens. Oh man, it really hit the spot. The tofu was cooked perfectly and the marinade was fantastic. I could really taste the smokiness of the chipotle. The rice had snow peas, red bell pepper, shredded carrots an was topped with sesame seeds. I really wish I could've finished it all in one sitting but I definitely packed the rest to bring home as a late night snack!

Cookbook Challenge. Week 2. Vcon - Chili Cornmeal Crusted Tofu Po' Boy

I'll admit that I've never had a Po' Boy in my pregan days but if I did, I would imagine this would blow any meat filled one out of the water. Seriously. From beginning to end this recipe is a winner all the way. I had been planning on making this recipe since I saw Veganomicon in the Cookbook Challenge book list and it finally happened today!

Today is my last day of freedom before starting a new job tomorrow so I wanted to make something really awesome since my cooking time is going to be much more limited now. I probably could have picked a more involved recipe, but this one has had me drooling for quite awhile.

Coleslaw is something I've been really missing since going vegan and I just haven't gotten around to making it. I made it first thing in the morning because I was feeling super motivated and I'm really glad I did. Right after I made it I obviously had to try it, you know, to make sure it tasted good! It was awesome. It was even more awesome after sitting in the fridge for a few hours getting all extra delicious! I used a mix of purple and green cabbage as well as some grated carrot. Purple cabbage is also called red cabbage, but it's all purple, no red!



 
It is also something that I could eat bowls of and never get sick of. The perfect snack or lazy lunch for me is a huge bowl of shredded purple cabbage tossed (Read: drowned) with balsamic vinegar. I've mentioned my love of balsamic before, and I will probably mention it a million more times, but when it's combined with the cabbage, it's the best.

The slaw dressing was really friggen fantastic too! The right mixture of Veganaise, rice or soy milk, some lemon juice, salt and pepper is very similar to what I remember non-vegan coleslaw dressing to taste like. Score! I love when I make something that reminds me of something I used to love back in the day.


 The Chile Cornmeal Crusted Tofu is a great companion to the coolness of the slaw. According to the recipe you can bake or fry it. I chose to bake it for 2 reasons. 1. Tofu + frying + me = 95% chance of disaster. 2. My mother was asking me all sorts of questions about the nutritional info for her new diet. Questions to which I had no answers and since I am never one to leave a loved one (especially my mom!) drooling over food they can't eat baking it was obviously the healthier choice. I also feel that that the baking really helped in keeping the crust on. If I fried it, I'm sure it would have all just floated off into the oil until I was left with nothing but greasy tofu triangles.

The cornmeal mix that the tofu was to be dredged in was packing some serious flavor. Tons of chili powder, cayenne, cumin, lime zest and salt will give your taste buds a much welcomed wake up call!


I set up my little tofu factory line and got to work soaking and dredging. And then baking. (Don't be fooled by the random ingredients on the counter, our spice cabinet is always overflowing onto the counter tops)


After the tofu was all baked up and crispy it was time to assemble my sub! A nice slathering of chipotle mayo(adobe sauce mixed with some Veganaise), a heap of coleslaw, some pickle slices and of course the tofu! All of this was put into a toasty sub roll and then devoured. Overall, I love this recipe. And again, I'm really glad I went with baking it, it made it so much easier to make, clean and then not feel all full of grease afterward. So Mom, if you are reading this, thanks for being on a diet! <3

Coconut Curry

I never thought I would like curry, I always found the smell very overpowering, until I tried a green curry coconut dipping sauce filled with veggies for scallion pancakes at my favorite local Thai restaurant. It definitely changed. I decided to try and recreate it as a main dish. I don't have an exact recipe, I usually never follow them completely so I scoured the web and combined quite a few of them to make the amazing meal that was dinner last night.

Here is my basic recipe
4 cloves garlic minced
1 shallot minced
1 tblspn minced fresh ginger
1 onion chopped
1-2 tblspns oil
Green curry paste to taste - I think I used about 2 tablespoons.. I add it by the teaspoon and taste
2 cans coconut millk
Salt and pepper to taste
1 lb tofu drained and cubed.
1/2 head cauliflower chopped into bite size pieces.
1 butternut squash peeled and chopped
1 lb fresh green beans broken into pieces.
1 red bell pepper chopped

Heat oil in wok and stir fry tofu until lightly browned, remove from pan.
Add garlic, ginger and shallot and cook for a minute or two.
Add coconut milk and a teaspoon or two at a time of curry paste and bring to boil.
Add cauliflower and squash and cook 10-15 minutes until they are almost perfectly tender.
Add the rest of the vegetables and cook until just about done.
Add tofu and cook until heated through.

Serve over jasmine rice.



The flavor of the sauce was so light but flavorful, it had just the right amount of spice with the flavor of the coconut coming through. I was nervous about the squash with the sauce but they matched perfectly. 
Luckily I made enough to feed an army so I can eat it all week for leftovers, unfortunately I am a slob in the kitchen so the aftermath is still sitting in the sink and on the counter.
